This is one of my FAVORITE soups ever. It is incredibly simple and delicious.
What is it?
It is a hearty knock-off of a creamy Italian soup served at olive garden that is absolutely mouth watering.
Est Time: 30-60 minutes
Serves: Roughly 6
(lasts my husband and I a few days)
This is just a basic outline, feel free to alter to your taste and amount of people serving.
What you'll need:
2-3 Baking Potatoes, cubed
1 lb Italian Sausage, ground or links
1 lb Italian Sausage, ground or links
2.5 cups Kale, chopped or torn
1/2 Onion, sliced
2 cup Chicken Broth
1 quart Water
1+ cup Heavy Whipping Cream
1 tbs Minced Garlic
Sliced French Bread (optional)
Prep:
1. In frying pan begin cooking sausage. (if links, chop prior to cooking)
2. While sausage is cooking- in a large pot bring water, chicken broth,
sliced onions, garlic and cubed potatoes to boil. (until potatoes are soft)
3. When sausage is thoroughly cooked drain the sausage of grease
and add sausage to the soup.
4. Add chopped kale to the soup.
5. Let simmer until kale is limp.
6. Add heavy whipping cream until satisfied with amount. (about 1 cup)
7. Add salt and pepper to taste.
8. Slice french bread and serve on the side.
9. EAT UP!
